I love this meal – healthy and so yummy.

 

Asian Turkey Lettuce Wraps

1 ¼ pounds extra-lean ground turkey

1 pkg (16 oz) frozen Asian mixed vegetables, thawed

1/3 C.  reduced-sodium teriyaki sauce  (San-J brand)

3 garlic cloves, minced

¼ cup hoisin sauce

1 Tbs rice wine vinegar

2 Tbs reduced-fat creamy peanut butter

1 Tbs sesame oil

2 Tbs minced fresh gingerroot

4 green onions, chopped

10 Boston lettuce leaves

In a large nonstick skillet coated with cooking spray, cook and stir the turkey over medium-high heat until no longer pink.  Coarsely chop the mixed vegetables; add to the pan.  Stir in the teriyaki sauce, hoisin sauce, peanut butter, ginger, garlic, vinegar and oil.  Cook and stir over medium-high heat for 5 minutes or until heated through. Remove from the heat; stir in onions.  Place a ½ C. turkey mixture on each leaf; fold lettuce over filling.
